  • 8 oz chicken breast, cooked
  • 2 1/2 cups cauliflower florets
  • 1 carrot, chopped
  • 1 1/2 tbsp ginger, grated
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1/2 tsp turmeric
  • 1/2 tsp black pepper
  • 1 tsp dried mint
  • 2 tbsp olive oil
  • Salt to taste

Instructions

  1. Heat olive oil in a small cooking pot over medium heat. Add chopped onion, minced garlic, turmeric, and black pepper; sauté for about 2–3 minutes until fragrant.
  2. Stir in cauliflower florets and add chicken broth or water mixed with salt. Cover and cook on medium-high heat for around 7 minutes until the cauliflower begins to soften.
  3. Add grated ginger, chopped carrot, and dried mint; continue cooking for another 5 minutes until the carrot is tender. Blend half of the soup with an immersion blender for a creamy yet chunky texture.
  4. Stir in cooked chicken and adjust seasoning with salt and pepper if needed. Add an additional cup of broth or water and cook for another 5–6 minutes before serving.
