  • 2 lamb shanks
  • Salt and freshly cracked black pepper, to taste
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 3 garlic cloves, smashed
  • 2 large carrots, peeled and cut into chunks
  • 2 parsnips, peeled and cut into chunks
  • 2 cups apple vinegar
  • 1 cup beef or chicken stock
  • 2 sprigs fresh rosemary

Instructions

  1. Season lamb shanks with salt and pepper. Heat olive oil in a Dutch oven over medium-high heat. Sear shanks until browned on all sides (4-5 minutes per side). Remove and set aside.
  2. In the same pot, sauté onion and garlic until softened (3-4 minutes).
  3. Add carrots and parsnips; cook for another 5 minutes.
  4. Deglaze the pot with apple vinegar, scraping up any browned bits. Add stock and rosemary; stir well.
  5. Return lamb to the pot, ensuring it’s mostly submerged in liquid. Bring to a simmer, cover, and transfer to a preheated oven at 300°F (150°C) for about 2-3 hours or until fork-tender.
  6. Remove from oven, let rest briefly before serving alongside root vegetables.
