Description

Baked Feta Potatoes are a delicious and satisfying side dish that elevates any meal with their rich, savory flavors. This recipe combines crispy roasted potatoes with creamy baked feta, infused with fragrant herbs and garlic for an irresistible taste experience. Perfect for family dinners or entertaining guests, these baked feta potatoes are easy to prepare and pack a flavorful punch.


Ingredients

  • 2 large baking potatoes
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp red chili flakes
  • 200g block of feta cheese
  • 1 head of garlic (top cut off)
  • 1 lemon (halved)
  • 1 tbsp honey
  • 20g fresh basil

Instructions

  1. Preheat oven to 200C | 390F.
  2. Wash and cube the potatoes, then par-boil in water for 6-8 minutes. Drain and let steam dry.
  3. Combine potatoes with olive oil, thyme, oregano, salt, pepper, and red chili flakes in a baking dish; stir well.
  4. Drizzle garlic with olive oil, wrap in foil, and place in the baking dish with potatoes.
  5. Roast for 30 – 40 minutes until golden brown.
  6. Remove garlic; place feta in the center of the tray and squeeze lemon half over it.
  7. Bake for an additional 15 minutes until feta is soft.
  8. Squeeze roasted garlic from skins; mash lightly and mix into potatoes along with juice from the remaining lemon half and fresh basil.
  9. Drizzle honey over the top; sprinkle with shredded basil and chili flakes before serving.
