  • 2 Tablespoons Olive Oil
  • 4 Yellow Onions (sliced thin)
  • 2 Pounds Yukon Gold Potatoes (washed)
  • 4 Tablespoons Salted Butter (or non-dairy butter)
  • 3/4 Cup Half & Half (or Full-Fat Coconut Milk)
  • 1 Teaspoon Kosher Salt
  • 1 Cup Parmesan Cheese (freshly grated)
  • 1 Bunch Chives (chopped)
  • Fresh Thyme
  • Fresh Sage

Instructions

  1. Heat olive oil in a skillet over medium heat; add sliced onions. Cook, stirring occasionally, for 40-50 minutes until caramelized.
  2. Meanwhile, wash and chop Yukon Gold potatoes. Boil in salted water for about 20 minutes until tender.
  3. Drain the potatoes and mash until smooth. Mix in butter, kosher salt, and half & half (or coconut milk) until creamy.
  4. Stir in half of the caramelized onions and Parmesan cheese.
  5. Transfer to a serving bowl, topping with remaining onions, chives, thyme, sage, and melted butter.
