Ingredients
- 2 Tablespoons Olive Oil
- 4 Yellow Onions (sliced thin)
- 2 Pounds Yukon Gold Potatoes (washed)
- 4 Tablespoons Salted Butter (or non-dairy butter)
- 3/4 Cup Half & Half (or Full-Fat Coconut Milk)
- 1 Teaspoon Kosher Salt
- 1 Cup Parmesan Cheese (freshly grated)
- 1 Bunch Chives (chopped)
- Fresh Thyme
- Fresh Sage
Instructions
- Heat olive oil in a skillet over medium heat; add sliced onions. Cook, stirring occasionally, for 40-50 minutes until caramelized.
- Meanwhile, wash and chop Yukon Gold potatoes. Boil in salted water for about 20 minutes until tender.
- Drain the potatoes and mash until smooth. Mix in butter, kosher salt, and half & half (or coconut milk) until creamy.
- Stir in half of the caramelized onions and Parmesan cheese.
- Transfer to a serving bowl, topping with remaining onions, chives, thyme, sage, and melted butter.
