Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
  2. Grate the zucchini and retain its moisture.

  4. In another bowl, whisk together oil, brown sugar, granulated sugar, eggs, applesauce (or Greek yogurt/sour cream), and vanilla until combined.
