  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F and line a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt.
  3. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar until combined. Beat in eggs, vegetable oil, and vanilla extract. Gradually mix in the dry ingredients until smooth.
  4. For the cream cheese layer, beat cream cheese until smooth; add sugar, egg yolk, and vanilla extract until well blended.
  5. Fill muffin cups with batter about three-quarters full and top with cream cheese mixture; gently swirl with a toothpick.
