  • 1/4 cup neutral oil (like canola or vegetable oil)
  • 3/4 cup packed brown sugar
  • 1/4 cup sour cream
  • 2 eggs
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 350°F. Prepare a 9×5 inch loaf pan with parchment paper or nonstick spray.
  2. In a medium bowl, whisk together flour, granulated sugar, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In a large bowl, melt the butter and then mix in oil, brown sugar, sour cream, eggs, and vanilla until combined.
  4. Shred the zucchini using a box grater or food processor. Blot excess moisture with paper towels.
  5. Stir shredded zucchini into the dry ingredients until just combined, then add wet mixture and fold gently.
  6. Pour the batter into the prepared pan; optionally sprinkle raw sugar on top.
  7. Bake for about 60 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool in the pan for about 15 minutes before transferring to a wire rack.
