Ingredients

- 1 tablespoon granulated sugar
- 6 egg whites
- 1 ½ cups granulated sugar
- 1 ½ cups unsalted butter, softened
- 1 teaspoon vanilla extract
- 3 tablespoons blackberry reduction
- edible flowers (micro pepper, alyssum and micro mint), washed and dried
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. Set aside.
- In another bowl, beat together the unsalted butter and granulated sugar until light and fluffy.
- Add in eggs one at a time, mixing well after each addition. Then stir in the vanilla extract and lime zest.
- Gradually add the dry ingredients alternately with milk and lime juice. Mix until just combined.
- Grease three 8-inch round cake pans with butter or non-stick spray.
- Divide the batter evenly among the prepared pans.
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Remove from oven and allow cakes to cool in pans for about 10 minutes before transferring to a cooling rack.
- In a blender or food processor, puree fresh blackberries with sugar and lime juice until smooth.

- In another bowl, beat softened butter until creamy; then gradually mix in blackberry reduction along with vanilla extract.
