  • 2 lamb shanks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 cup apple vinegar
  • 2 cups beef or lamb stock
  • Fresh rosemary sprigs
  • Salt and pepper to taste

Instructions

  1. Gather and prepare all ingredients: chop onions, carrots, celery; mince garlic.
  2. Heat olive oil in a heavy-bottomed pot over medium-high heat. Season lamb shanks with salt and pepper and sear until browned on all sides. Remove from pot.
  3. In the same pot, sauté onions, carrots, celery, and garlic until softened.
  4. Stir in tomato paste; deglaze with apple vinegar, scraping up any browned bits.
  5. Return the lamb shanks to the pot and add beef or lamb stock until mostly submerged. Add rosemary and bring to a simmer.
  6. Cover and reduce heat to low; braise for about 2-3 hours or until meat is fork-tender.
