Description

  • 9 tbsp (134g) salted butter
  • 1/2 cup (125g) brown sugar
  • 1/4 cup (40g) granulated sugar
  • 1 egg, at room temperature
  • 1 tbsp (15g) heavy cream, at room temperature
  • 1 1/2 tsp (8g) vanilla extract
  • 1 1/4 cup + 2 tbsp (190g) all-purpose flour
  • 1/2 tsp (3g) baking soda
  • 1/2 tsp (2g) baking powder
  • 1/4 tsp (1g) salt
  • 3/4 cup (120g) semi-sweet chocolate chips
  • 3 cups (300g) kataifi (shredded phyllo dough)
  • 1 cup (300g) pistachio cream/butter
  • 2 tbsp (28g) salted butter
  • 2 cups (475ml) heavy cream
  • 1 cup (170g) semi-sweet chocolate chips
  • Chopped pistachios, for garnishing

Instructions

  1. Preheat your oven to 350°F. Grease an 8×8-inch baking pan and line it with parchment paper.
  2. Melt the salted butter in a saucepan over medium-high heat until golden brown, then let it cool slightly.
  3. In a bowl, whisk together flour, baking soda, baking powder, and salt; set aside.
  4. Combine the browned butter with both sugars, whisking well before adding the egg and heavy cream.
  5. Fold the dry ingredients into the wet mixture until just combined, then gently stir in semi-sweet chocolate chips.
  6. Spread the dough evenly in the prepared pan and bake for 22–27 minutes or until golden brown.
  7. Toast kataifi in melted butter until crispy, then mix in pistachio cream.
  8. Prepare chocolate ganache by pouring hot heavy cream over chocolate chips; stir until smooth.
  9. Once the cookie layer is cool, spread the pistachio mixture on top, followed by ganache. Chill for at least one hour before slicing.
