Ingredients
- 9 tbsp (134g) salted butter
- 1/2 cup (125g) brown sugar
- 1/4 cup (40g) granulated sugar
- 1 egg, at room temperature
- 1 tbsp (15g) heavy cream, at room temperature
- 1 1/2 tsp (8g) vanilla extract
- 1 1/4 cup + 2 tbsp (190g) all-purpose flour
- 1/2 tsp (3g) baking soda
- 1/2 tsp (2g) baking powder
- 1/4 tsp (1g) salt
- 3/4 cup (120g) semi-sweet chocolate chips
- 3 cups (300g) kataifi (shredded phyllo dough)
- 1 cup (300g) pistachio cream/butter
- 2 tbsp (28g) salted butter
- 2 cups (475ml) heavy cream
- 1 cup (170g) semi-sweet chocolate chips
- Chopped pistachios, for garnishing
Instructions
- Preheat your oven to 350°F. Grease an 8×8-inch baking pan and line it with parchment paper.
- Melt the salted butter in a saucepan over medium-high heat until golden brown, then let it cool slightly.
- In a bowl, whisk together flour, baking soda, baking powder, and salt; set aside.
- Combine the browned butter with both sugars, whisking well before adding the egg and heavy cream.
- Fold the dry ingredients into the wet mixture until just combined, then gently stir in semi-sweet chocolate chips.
- Spread the dough evenly in the prepared pan and bake for 22–27 minutes or until golden brown.
- Toast kataifi in melted butter until crispy, then mix in pistachio cream.
- Prepare chocolate ganache by pouring hot heavy cream over chocolate chips; stir until smooth.
- Once the cookie layer is cool, spread the pistachio mixture on top, followed by ganache. Chill for at least one hour before slicing.
