  • 1/2 cup water
  • 1 tbsp apple cider vinegar
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries (hulled & quartered)
  • ¼ cup granulated sugar
  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • Optional: Turbinado sugar for topping

Instructions

  1. Prepare the crust: Melt butter in a skillet until golden brown. Mix flour and salt in a bowl; stir in cooled butter until crumbly. Add water and vinegar gradually to form dough. Wrap and chill for at least one hour.
  2. Preheat oven to 375°F (190°C).
  3. Roll out two-thirds of the dough and place it into a pie dish.
  4. For the filling, mix peaches, strawberries, sugar, cornstarch, lemon juice, and salt in a bowl until combined.
  5. Pour fruit filling into the crust; roll out remaining dough for the top layer.
  6. Bake for about 70 minutes or until golden brown.
  7. Cool before serving.
