  • 8 ounces burrata cheese
  • 23 large heirloom tomatoes
  • 1 cup cherry tomatoes
  • 1/2 cup assorted olives
  • 1/2 cup pickled peppers
  • 1/4 red onion, thinly sliced
  • 1/4 lb turkey slices or chicken slices
  • Lettuce or micro-greens
  • Fresh herbs (basil, parsley)
  • 1/4 cup olive oil
  • 2 Tbsp lemon juice
  • 3 Tbsp red or white apple vinegar
  • 1 tsp Italian herb seasoning
  • 1 tsp sugar
  • good pinch of coarse salt and pepper

Instructions

  1. Start by placing the olives in a small bowl and arranging pickled peppers next to them on one end of the serving platter.
  2. Create a base by adding a layer of greens on the opposite side.
  3. Wash and slice the heirloom tomatoes while halving the cherry tomatoes. In a separate bowl, whisk together the dressing ingredients.
  4. Arrange the sliced heirloom tomatoes in an overlapping pattern on the platter and top with halved cherry tomatoes.
  5. Tuck in thin slices of red onion around the tomatoes and fill any gaps with turkey or chicken slices.
  6. Finish by cutting open the burrata cheese and placing it in the center of your arrangement. Drizzle generously with dressing and serve immediately.
