  • 12 ounces Rigatoni (cooked)
  • 1 ½2 cups diced heirloom tomatoes
  • 1 cup fresh mozzarella balls
  • ¼ cup chiffonaded basil
  • ½ cup olive oil
  • ½ tsp garlic powder
  • ½ tsp dried parsley
  • ¼ tsp red pepper flakes
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. In a small bowl, mix olive oil, garlic powder, dried parsley, red pepper flakes, oregano, salt, and black pepper. Set aside.
  2. Cook Rigatoni according to package instructions until al dente; drain and cool.
  3. Toss warm pasta with the olive oil mixture until coated.
  4. Chop heirloom tomatoes and chiffonade basil while pasta cools.
  5. Once the pasta is cooled slightly, combine it with tomatoes, mozzarella balls, and basil in a large mixing bowl.
  6. Serve immediately or chill for later.
