Ingredients
- 1 ¾ cups whole milk
- 6 chai tea bags
- 2 cloves
- 1 stick cinnamon
- ¼ teaspoon ground ginger
- ¼ teaspoon allspice
- 3 teaspoons powdered vegan gelatin
- ⅓ cup white granulated sugar
- 1 ½ cups thickened cream
- 1 teaspoon vanilla extract

- ¼ cup white granulated sugar (for toffee)
- 1 tablespoon water (for toffee)
- 1 tablespoon pistachios, roughly chopped (for toffee)
Instructions
- Infuse 1 cup of whole milk with chai tea bags and spices in a saucepan over medium heat until just below simmering. Let steep for 10 minutes.
- Bloom 3 teaspoons of vegan gelatin in ¾ cup of cold milk for 5 minutes.
- Remove tea bags and spices from the infused milk; stir in sugar, vanilla, and salt until dissolved.
- Whisk in the bloomed vegan gelatin until fully dissolved, then fold in heavy cream until smooth.
- Pour into serving glasses or molds, cover with plastic wrap, and refrigerate for at least 4 hours until set.
- For optional pistachio toffee, cook sugar and water in a saucepan until caramelized; stir in chopped pistachios before cooling on parchment paper.
- Top each panna cotta with pistachio toffee before serving.
