Ingredients
Scale
- 2 1/4 cups all-purpose flour
- 2 tsp pumpkin spice blend
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup (226g) European style unsalted butter, browned and cooled
- 1 cup (200g) light brown sugar
- 1/3 cup (79ml) pure maple syrup
- 1 large egg yolk, room temperature
- 1/2 cup (125g) canned pumpkin, blotted
- 2 tsp (10ml) vanilla extract
- 1/2 tsp (2.5ml) maple extract, optional
- 1/2 cup (100g) granulated sugar
- 1/2 tsp pumpkin spice blend
Instructions
- Start by making your brown butter about an hour before baking: Melt the butter in a heavy-bottom saucepan over medium heat. Once it starts foaming, whisk continuously until brown bits form at the bottom. Remove from heat and pour into a clean bowl to cool for about 30 minutes.
- While the butter is cooling: Lay 2-3 paper towels across a shallow bowl. Scoop a generous 1/2 cup of canned pumpkin onto the towels. Allow excess moisture to absorb into the towels; then squeeze out any remaining water before using.
- In another bowl: Whisk together flour, spice blend, baking soda, and salt until combined. Set this mixture aside for later use.
- In your mixing bowl: Stir together cooled brown butter, brown sugar, and maple syrup until well mixed. Add in the egg yolk and mix until combined. Then stir in blotted pumpkin, vanilla extract, and optional maple extract until smooth.
- Gradually fold in the dry ingredients into the wet mixture: Stir until just combined; be careful not to overmix.
- Cover your dough with plastic wrap: Chill it in the fridge for at least 8 hours or overnight for best results.
- When ready to bake: Preheat your oven to 350°F (177°C). Line one or two large baking sheets with parchment paper.
- In a small bowl: Combine granulated sugar with remaining spice blend until mixed well.
- Remove dough from fridge: Let it sit at room temperature for about 30 minutes. Using a cookie scoop, portion out cookie dough balls and roll them in spiced sugar mixture.
- On prepared baking sheets: Place cookie dough balls about 2-3 inches apart. Bake for 12-14 minutes; check at around 9-10 minutes, gently banging pans if necessary for desired puffiness.
- Finally: Let cookies cool on baking sheets for about 3-5 minutes before transferring them to a cooling rack to cool completely.
