Ingredients

  • Chicken breast chunks
  • Red bell peppers
  • Yellow bell peppers
  • Onion slices
  • Garlic and ginger paste
  • Curry powder
  • Coconut milk or yogurt
  • Olive oil
  • Fresh cilantro
  • Long-grain basmati rice
  • Water
  • Pinch of salt

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté onion slices, garlic, and ginger paste until fragrant (2-3 minutes).
  2. Add chicken chunks; sear until lightly browned (5-7 minutes).
  3. Stir in curry powder, then add red and yellow bell peppers along with coconut milk or yogurt.
  4. Reduce heat and simmer until the chicken is cooked through (10-15 minutes), stirring occasionally.
  5. Meanwhile, rinse basmati rice under cold water; combine with water and salt in a pot. Bring to boil, then cover and reduce heat to low for about 15 minutes until fluffy.
  6. Serve curry over rice, garnished with fresh cilantro.
