Instructions
- Heat olive oil in a skillet over medium heat. Sauté onion slices, garlic, and ginger paste until fragrant (2-3 minutes).
- Add chicken chunks; sear until lightly browned (5-7 minutes).
- Stir in curry powder, then add red and yellow bell peppers along with coconut milk or yogurt.
- Reduce heat and simmer until the chicken is cooked through (10-15 minutes), stirring occasionally.
- Meanwhile, rinse basmati rice under cold water; combine with water and salt in a pot. Bring to boil, then cover and reduce heat to low for about 15 minutes until fluffy.
