- 1 medium carrot (grated)
- 1 pound zucchini (grated)
- 1 medium yellow onion (chopped)
- 3–4 tablespoons sour cream
- 1½ cups Cheddar or Colby Jack cheese
- 1 teaspoon garlic powder
- ½ teaspoon cracked black pepper
- ½ teaspoon salt or to taste + for zucchini

Instructions
- Preheat your oven to 400°F.
