  • 2 cups Granulated Sugar
  • 3 Large Eggs
  • 1 cup Vegetable Oil
  • 1 tbsp Vanilla Extract
  • 3 cups All-Purpose Flour
  • 1/2 cup Unsweetened Cocoa Powder
  • 2 cups Grated Zucchini
  • 12 oz Semi-Sweet Chocolate Chips

Instructions

  1. Preheat your oven to 350ºF and prepare two loaf tins with baking spray.
  2. In a large bowl, whisk together sugar, eggs, oil, and vanilla until smooth.
  3. Mix in flour, cocoa powder, salt, baking powder, baking soda, cinnamon, and nutmeg until just combined.
  4. Gently fold in grated zucchini and 8 oz of chocolate chips until evenly distributed.
  5. Divide batter between the prepared tins and top with remaining chocolate chips.
  6. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  7. Allow to cool in pans for 5-10 minutes before transferring to cooling racks.
