  • ¼ cup all-purpose flour
  • ¾ cup water
  • 3 ½ cups all-purpose flour
  • ⅓ cup granulated sugar
  • 2 teaspoon instant yeast
  • ¾ teaspoon fine sea salt
  • ½ cup whole milk (slightly warmed)
  • 1 tsp instant coffee granules
  • 1 large egg (room temperature)
  • 1/2 tsp vanilla extract
  • Tangzhong (from recipe above)
  • 9 tablespoon unsalted butter (room temperature)
  • 2/3 cup dark brown sugar (or light brown sugar)
  • 2 tsp ground cinnamon
  • 1 ½ tsp instant coffee granules
  • 2 oz cream cheese (softened)
  • 1 cup powdered sugar
  • 4 tbsp heavy cream

Instructions

  1. Prepare the tangzhong by whisking together water and flour in a saucepan over medium heat until thickened. Set aside.
  2. In a mixing bowl, combine flour, sugar, yeast, and salt.
  3. Warm milk slightly; dissolve instant coffee in it.
  4. Combine wet ingredients (including tangzhong) with dry ingredients; knead into a shaggy dough.
  5. Gradually add softened butter while kneading until smooth and elastic.
  6. Let dough rise in a warm area until doubled in size (45–60 minutes).
  7. Prepare the filling by mixing softened butter, brown sugar, cinnamon, and instant coffee.
  8. Roll out the dough, spread filling evenly, cut into strips, roll up each strip, and place in a baking pan to rise again (45–60 minutes).
  9. Bake at 325°F (163°C) for 20–23 minutes until golden brown.
  10. Make frosting by mixing cream cheese with butter and powdered sugar; add heavy cream and instant coffee to blend.
  11. Frost cooled rolls generously before serving.
