Ingredients
- 1 tbsp olive oil
- 1 tbsp unsalted butter
- 4 skinless salmon fillets
- ¼ tsp salt
- 1 tsp garlic powder
- 1 tbsp Cajun seasoning
- 4 garlic cloves (minced)
- 1 yellow onion (finely chopped)
- ½ tsp salt
- 1 tsp black pepper
- 3 sprigs of thyme
- 1 cup orzo
- 3 ears corn
- 2 ½ cups chicken broth
- 1 cup grated Parmesan
- 1 tbsp lemon juice
- 1 cup heavy cream
- Chili flakes for serving (optional)
Instructions
- Prepare the salmon by patting it dry and seasoning with salt, garlic powder, and Cajun seasoning.
- Shuck the corn and shave off the kernels from each cob.
- In a nonstick skillet, heat olive oil and butter over medium-high heat. Sear the salmon for 3-4 minutes per side until golden brown; remove from skillet.
- Lower heat and sauté minced garlic and chopped onion until soft. Add salt, pepper, and thyme.
- Toast the orzo and corn together in the skillet for about one minute.
- Pour in chicken broth; bring to a boil, then simmer until orzo is nearly al dente.
- Stir in Parmesan cheese, heavy cream, and lemon juice; return salmon to skillet to heat through.
- Serve garnished with thyme and chili flakes if desired.
