  • 500g minced chicken
  • 1 egg
  • 1 cup breadcrumbs
  • 2 tbsp milk
  • 2 cloves garlic, finely chopped
  • 1 tsp Italian herb blend
  • Salt & pepper
  • 1 tbsp olive oil for frying
  • 1 tbsp olive oil
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 2 tbsp tomato paste
  • Fresh parsley, chopped

Instructions

  1. In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, garlic, Italian herbs, salt, and pepper. Mix until well combined.
  2. Shape the mixture into uniform meatballs.
  3. Heat olive oil in a skillet over medium heat and sear the meatballs until golden brown on all sides. Remove from skillet and set aside.
  4. In the same skillet, add onion and bell peppers; sauté until softened.
  5. Stir in smoked paprika, chicken stock, heavy cream, and tomato paste; season to taste.
  6. Return meatballs to the skillet and simmer in the sauce for about 10-12 minutes.
  7. Serve hot with fresh parsley sprinkled on top.
