Ingredients
- 500g minced chicken
- 1 egg
- 1 cup breadcrumbs
- 2 tbsp milk
- 2 cloves garlic, finely chopped
- 1 tsp Italian herb blend
- Salt & pepper
- 1 tbsp olive oil for frying
- 1 tbsp olive oil
- 1 onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 cup chicken stock
- 1 cup heavy cream
- 2 tbsp tomato paste
- Fresh parsley, chopped
Instructions
- In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, garlic, Italian herbs, salt, and pepper. Mix until well combined.
- Shape the mixture into uniform meatballs.
- Heat olive oil in a skillet over medium heat and sear the meatballs until golden brown on all sides. Remove from skillet and set aside.
- In the same skillet, add onion and bell peppers; sauté until softened.
- Stir in smoked paprika, chicken stock, heavy cream, and tomato paste; season to taste.
- Return meatballs to the skillet and simmer in the sauce for about 10-12 minutes.
- Serve hot with fresh parsley sprinkled on top.
