  • 1 lb boneless skinless chicken breasts
  • 12 oz rotini or fusilli pasta
  • 4 cloves garlic
  • 1 cup heavy cream
  • 1 cup whole milk
  • 6 oz Velveeta cheese
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste

Instructions

  1. Cook pasta in salted boiling water until al dente (8-10 minutes), then drain and reserve ½ cup of pasta water.
  2. In a skillet, heat olive oil and butter over medium-high heat. Sear chicken seasoned with Cajun seasoning and spices until golden brown (8-10 minutes). Set aside.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant. Add heavy cream and milk; bring to simmer.
  4. Stir in Velveeta until melted, then add cheddar, mozzarella, and Parmesan cheeses until smooth. Adjust thickness with reserved pasta water if needed.
  5. Toss cooked pasta into the sauce and mix thoroughly. Serve topped with seared chicken.
