  • 2 cups baby carrots
  • 1 tablespoon honey

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine olive oil, rosemary, thyme, garlic powder, salt, and pepper. Coat chicken breasts in marinade and let sit for 10 minutes.
  3. Place chicken in a baking dish and roast for 25-30 minutes until cooked through (165°F/75°C).
  4. Boil cubed potatoes in salted water until tender (15-20 minutes). Drain and mash with milk, butter, and salt.
  5. Simmer baby carrots in water until tender (5-7 minutes). Drain and stir in honey and butter.
