  • ¾ cup uncooked quinoa
  • 1 can (15 ounces) black beans
  • 1 large mango, diced
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • ½ cup cilantro, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon honey
  • 1 teaspoon dijon mustard
  • ½ teaspoon chipotle chili powder
  • 1 clove garlic, minced
  • ½ teaspoon salt
  • Freshly ground black pepper

Instructions

  1. Rinse quinoa under cold water. Combine quinoa and water in a medium pot and bring to a boil. Cover, reduce heat to low, and simmer for 15 minutes. Remove from heat and fluff with a fork.
  2. While quinoa cooks, chop mango, bell pepper, avocado, cilantro, and any other desired vegetables.
  3. In a small bowl, whisk together olive oil, lime juice, honey, dijon mustard, chipotle powder, minced garlic, salt, and pepper until smooth.
  4. In a large mixing bowl, combine cooked quinoa with chopped ingredients. Pour dressing over the salad and toss gently until everything is well coated.
  5. Allow the salad to chill for at least 30 minutes before serving for better flavor.
