  • 12 oz medium shell pasta
  • 8 oz Velveeta cheese
  • 4 oz cream cheese
  • 1 cup shredded mozzarella cheese
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 4 cloves garlic, minced
  • 1 cup all-purpose flour
  • 3 cups whole milk
  • Salt and black pepper, to taste
  • Fresh parsley or chives, for garnish (optional)

Instructions

  1. Cook the pasta in salted boiling water until al dente; drain and set aside.
  2. Toss chicken cubes with olive oil and Cajun seasoning. Sauté in a skillet until golden brown; remove from heat.
  3. In the same skillet, melt butter and sauté minced garlic. Whisk in flour to create a roux, then gradually add milk until thickened.
  4. Stir in Velveeta and cream cheese until melted, followed by mozzarella and Parmesan. Season to taste.
  5. Combine cooked chicken and pasta into the sauce; toss to coat evenly.
