  • 1 tbsp espresso powder
  • 1 1/2 sticks unsalted butter (softened)
  • 3/4 cup brown sugar
  • 1/4 cup white granulated sugar
  • 1 large egg (room temperature)
  • 2 tsp vanilla extract
  • 1/4 cup molasses
  • white granulated sugar (for rolling)
  • 1 1/2 cups powdered sugar (sifted)
  • 1/4 tsp ground cinnamon
  • 2 tbsp strong coffee (adjust as needed)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking soda, salt, ginger, cinnamon, clove, and espresso powder.
  3. In another bowl, cream the softened butter with brown and white sugars until fluffy.
  4. Add the egg, vanilla extract, and molasses to the butter mixture; mix well.
  5. Gradually combine dry ingredients with wet ingredients until just mixed.
  6. Scoop tablespoon-sized portions of dough, roll into balls, and coat in granulated sugar before placing on prepared sheets.
  7. Bake for about 13 minutes or until edges are set but centers remain soft.
  8. Cool slightly before transferring to wire racks; drizzle with coffee glaze made by mixing powdered sugar, cinnamon, and coffee.
