Ingredients
- 1 cup instant oats
- ¾ cup whole wheat flour
- 1 ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1 tsp baking powder
- ¼ tsp salt
- 1 tbsp coconut oil or unsalted butter, melted and cooled
- 1 large egg, room temperature
- 1 tsp almond extract
- ¼ cup pure maple syrup, room temperature
- 6 tbsp unsweetened vanilla almond milk, room temperature
- ½ cup diced peaches
Instructions
- In a medium bowl, whisk together oats, flour, cinnamon, nutmeg, baking powder, and salt.
- In another bowl, combine melted coconut oil (or butter), egg, almond extract, maple syrup, and almond milk. Mix well.
- Gradually add the oat mixture to the wet ingredients until just combined. Gently fold in diced peaches.
- Chill the dough in the refrigerator for 30 minutes.
- Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper.
- Scoop rounded dough onto the baking sheet and flatten slightly (cookies won’t spread).
- Bake for 9-12 minutes until lightly golden. Let cool before serving.
