  • 1 cup instant oats
  • ¾ cup whole wheat flour
  • 1 ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tbsp coconut oil or unsalted butter, melted and cooled
  • 1 large egg, room temperature
  • 1 tsp almond extract
  • ¼ cup pure maple syrup, room temperature
  • 6 tbsp unsweetened vanilla almond milk, room temperature
  • ½ cup diced peaches

Instructions

  1. In a medium bowl, whisk together oats, flour, cinnamon, nutmeg, baking powder, and salt.
  2. In another bowl, combine melted coconut oil (or butter), egg, almond extract, maple syrup, and almond milk. Mix well.
  3. Gradually add the oat mixture to the wet ingredients until just combined. Gently fold in diced peaches.
  4. Chill the dough in the refrigerator for 30 minutes.
  5. Preheat oven to 325°F (163°C) and line a baking sheet with parchment paper.
  6. Scoop rounded dough onto the baking sheet and flatten slightly (cookies won’t spread).
  7. Bake for 9-12 minutes until lightly golden. Let cool before serving.
