  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 3/4 cups whole wheat flour or spelt flour

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a 9" x 5" loaf pan by lining it with parchment paper.
  2. In a large bowl, mash the bananas until smooth. Stir in the grated zucchini, egg, olive oil, maple syrup, vanilla extract, cinnamon, baking powder, baking soda, and salt until well combined.
  3. Gradually add the flour to the wet mixture and stir gently with a spatula just until combined. Avoid overmixing.
  4. Pour the batter into the prepared loaf pan and level it off. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  5. Allow cooling in the pan for about 10 minutes before transferring to a cooling rack to cool completely before slicing.
