- 3 cups fresh peaches, peeled and diced (about 4 medium peaches)

- 1 tablespoon cornstarch
- 2 large eggs
- ¾ cup granulated sugar
- ½ cup sour cream or plain Greek yogurt
- ¼ cup all-purpose flour

Instructions
- Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper or grease it lightly.
- In a mixing bowl, cream together softened butter and ½ cup granulated sugar until light. Add flour and salt; mix until crumbly. Press into the bottom of the prepared pan.
- Bake the crust for about 15 minutes until slightly golden; set aside to cool.
- In another bowl, combine diced peaches with ¼ cup granulated sugar, lemon juice, and cornstarch; toss gently.
- Spread peach filling evenly over the cooled crust.
- In a separate bowl, whisk together eggs, ¾ cup granulated sugar, sour cream (or yogurt), flour, and vanilla until smooth; pour over peach layer.
- Bake for an additional 35–40 minutes until set and lightly golden. Cool completely before cutting into squares.
