Ingredients

  • 2 lbs baby red or yellow potatoes
  • 3 hard-boiled eggs
  • 6 slices turkey bacon
  • 1/2 medium onion
  • 1/4 cup fresh chives
  • 2 Tbsp raw honey or maple syrup
  • 3 Tbsp dijon mustard
  • 2 Tbsp fresh lemon juice or white vinegar
  • 3 Tbsp avocado oil
  • Sea salt and black pepper to taste

Instructions

  1. Cook the potatoes in a large pot of boiling water until fork-tender (7-10 minutes). Drain and let cool.
  2. In a bowl, whisk together melted honey (or maple syrup), Dijon mustard, lemon juice (or vinegar), and avocado oil until smooth. Season with salt and pepper to taste.
  3. In a large mixing bowl, combine cooled potatoes, chopped eggs, crumbled turkey bacon, diced onions, and chives. Pour the dressing over the salad and mix gently to coat.
  4. Serve immediately or store in an airtight container in the refrigerator for up to 4 days.
