- 2 lbs baby red or yellow potatoes
- 3 hard-boiled eggs
- 6 slices turkey bacon
- 1/2 medium onion
- 1/4 cup fresh chives
- 2 Tbsp raw honey or maple syrup
- 3 Tbsp dijon mustard
- 2 Tbsp fresh lemon juice or white vinegar
- 3 Tbsp avocado oil
- Sea salt and black pepper to taste
Instructions
- Cook the potatoes in a large pot of boiling water until fork-tender (7-10 minutes). Drain and let cool.
- In a bowl, whisk together melted honey (or maple syrup), Dijon mustard, lemon juice (or vinegar), and avocado oil until smooth. Season with salt and pepper to taste.
- In a large mixing bowl, combine cooled potatoes, chopped eggs, crumbled turkey bacon, diced onions, and chives. Pour the dressing over the salad and mix gently to coat.
- Serve immediately or store in an airtight container in the refrigerator for up to 4 days.
