  • 1 pound chicken fillet (breast or thighs)
  • 1 head romaine lettuce
  • 4 strips turkey bacon
  • 1 avocado
  • 1/2 cup grape tomatoes
  • 1/4 cup corn kernels
  • 1/4 red onion
  • 1/3 cup honey
  • 2 tablespoons dijon mustard
  • 1/2 teaspoon ground mustard
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 2 cloves garlic, minced
  • Salt to taste

Instructions

  1. Prepare the dressing by combining honey, dijon mustard, ground mustard, olive oil, apple cider vinegar, minced garlic, and salt in a jar. Shake well.
  2. Marinate the chicken using 1/3 of the dressing for at least 30 minutes.
  3. Cook the turkey bacon until crispy; set aside. In the same pan, cook the marinated chicken until fully cooked.
  4. Assemble the salad by layering romaine lettuce, sliced tomatoes, corn, avocado slices, red onion, turkey bacon pieces, and cubed chicken in a large bowl.
