  • 32 oz cooked tortellini
  • 4 oz crispy turkey slices
  • 8 oz pearl mozzarella balls
  • 15 oz corn kernels
  • 3 small peaches, diced
  • 2 cups cherry tomatoes, sliced
  • ½ cup fresh basil, chopped
  • ½ cup extra virgin olive oil
  • ⅓ cup hot honey
  • 1 tbsp dijon mustard
  • 3 tbsp red apple vinegar
  • 2 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp pepper

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Arrange turkey slices in a single layer on the baking sheet and bake for 10-15 minutes until crispy. Set aside to cool.
  3. In a large mixing bowl, combine cooked tortellini, mozzarella balls, corn, diced peaches, tomatoes, and basil.
  4. Chop the cooled turkey slices and add them to the bowl.
  5. In a glass measuring cup, whisk together olive oil, hot honey, dijon mustard, apple vinegar, minced garlic, salt, and pepper.
  6. Pour the dressing over the salad mixture and toss to coat evenly.
  7. Serve at room temperature or chilled.
