  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup dry apple vinegar or additional broth
  • 2 teaspoons fresh thyme or 1 teaspoon dried thyme
  • 2 teaspoons Worcestershire sauce
  • Salt and pepper to taste
  • 2 bay leaves

Instructions

  1. Sear the Beef: Set your Instant Pot to 'Sauté' mode. Add olive oil and season the roast with salt and pepper. Brown all sides of the roast (about 4-5 minutes per side), then remove it from the pot.
  2. Caramelize Onions: In the same pot, add sliced onions. Cook for about 10-15 minutes until golden brown, then add minced garlic for another minute.
  3. Deglaze: Pour in the apple vinegar or extra broth, scraping up any browned bits at the bottom.
  4. Pressure Cook: Return the roast to the pot along with beef broth, thyme, Worcestershire sauce, and bay leaves. Secure lid and set to 'Manual' high pressure for 60 minutes.
  5. Release Pressure: Allow natural pressure release for about 15 minutes before carefully releasing any remaining pressure.
  6. Serve: Discard bay leaves, shred the beef using forks, and serve hot garnished with parsley.
