- 3 large bell peppers
- 1 tsp olive oil
- 1/4 tsp fennel seeds
- 1 pound lean ground beef
- 1 cup keto tomato sauce
- 1 1/2 cups shredded mozzarella cheese (divided use)
- 1 cup whole milk ricotta cheese
- 1/4 cup Parmesan cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off each bell pepper and remove seeds; rinse under cold water.
- In a skillet over medium heat, add olive oil and fennel seeds. Add ground beef and cook until browned (5-7 minutes). Drain excess fat and stir in tomato sauce; let simmer for 5 minutes.
- In a mixing bowl, combine ricotta cheese, half of the mozzarella, and Parmesan cheese until smooth.
- Gently fold the cooked beef mixture into the cheese mixture until well mixed.
- Fill each bell pepper with the beef-cheese mixture and pack tightly without overfilling.
- Place stuffed peppers upright in a baking dish, top with remaining mozzarella cheese, cover with foil, and bake for about 30 minutes. Remove foil during the last 10 minutes for browning.
- Let cool slightly before serving.
