- 6 tablespoons unsalted butter (melted)
- 6 ounces cream cheese (room temperature)
- 1 (14-ounce) can sweetened condensed milk
- 4 egg yolks
- 1 tablespoon lime zest
- ½ cup key lime juice
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×9-inch pan with parchment paper.
- In a food processor, crush the graham crackers into fine crumbs. Mix with sugar, salt, and melted butter until combined.
- Press the mixture into the bottom of the prepared pan and bake for 10 minutes until set.
- In a large bowl, beat cream cheese until smooth. Gradually mix in sweetened condensed milk, then add egg yolks one at a time.
- Stir in lime juice and zest until well combined. Pour over the crust and bake for another 15-18 minutes, until set.
- Allow to cool before refrigerating for at least 2 hours before serving.
