  • 1 cup unsweetened almond milk
  • 7 oz plain Greek yogurt
  • 2 TBSP fresh lime juice
  • 1 + 1/4 cups all-purpose flour
  • 5 graham crackers
  • 2 TBSP sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 TBSP coconut oil (melted + cooled slightly)
  • 2 eggs
  • Zest of 1 lime
  • 1/2 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/8 tsp pure vanilla extract
  • Lime zest (to taste)

Instructions

  1. In a bowl, whisk together almond milk, Greek yogurt, and lime juice; let it thicken.
  2. Crush graham crackers into fine crumbs.
  3. In another bowl, mix flour, graham cracker crumbs, sugar, baking powder, baking soda, and salt.
  4. Preheat griddle or skillet over medium heat; grease lightly.
  5. Combine wet ingredients with melted coconut oil and eggs; stir in lime zest.
  6. Gradually mix dry ingredients into wet until just combined.
  7. Pour 1/3 cup of batter onto the griddle; cook until bubbles form then flip to brown both sides.
  8. Whip heavy cream with powdered sugar and vanilla extract until soft peaks form.
  9. Serve pancakes topped with whipped cream and crushed graham crackers.
