  • 1/4 cup ricotta cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1 tablespoon fresh thyme
  • 1 tablespoon olive oil (for drizzling)
  • 1 tablespoon honey
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. In a medium bowl, combine warm water, sugar, and active dry yeast; let sit for about 5 minutes until frothy.
  2. In another bowl, mix all-purpose flour and salt. Add yeast mixture and olive oil; stir until a dough forms.
  3. Knead the dough on a floured surface for about 8–10 minutes until smooth. Place in an oiled bowl, cover, and let rise for 1 to 1.5 hours until doubled.
  4. While the dough rises, mix ricotta, mozzarella, Parmesan, lemon zest, and lemon juice in a small bowl.
  5. Preheat your oven to 475°F (245°C) with a baking sheet or pizza stone inside.
  6. Roll out the risen dough into a thin round shape (about 12 inches).
  7. Transfer the dough onto parchment paper; spread the cheese mixture over it and top with fresh thyme.
  8. Bake for 10–12 minutes until golden brown.
