- 4 2/3 cups Rice Krispies Cereal
- 4 tablespoons salted butter
- 10 ounces vegan marshmallows
- 1 teaspoon peppermint extract
- Green food coloring (about 10 drops)
- 3/4 cup mini chocolate chips
Instructions
- Grease a large mixing bowl with butter or cooking spray, then add the Rice Krispies Cereal.
- In a medium-large saucepan over low heat, melt the butter.
- Add the vegan marshmallows, stirring until about three-quarters have melted.
- Remove from heat and stir continuously until fully melted. Mix in peppermint extract and food coloring.
- Pour the mixture over the Rice Krispies and gently fold until coated.
- Let it cool for about 5–8 minutes, then stir in most of the mini chocolate chips.
- Transfer into a greased 8-inch baking pan, pressing down gently, and sprinkle reserved chocolate chips on top.
- Allow to set at room temperature for at least 30 minutes before cutting into squares.
