  • 4 2/3 cups Rice Krispies Cereal
  • 4 tablespoons salted butter
  • 10 ounces vegan marshmallows
  • 1 teaspoon peppermint extract
  • Green food coloring (about 10 drops)
  • 3/4 cup mini chocolate chips

Instructions

  1. Grease a large mixing bowl with butter or cooking spray, then add the Rice Krispies Cereal.
  2. In a medium-large saucepan over low heat, melt the butter.
  3. Add the vegan marshmallows, stirring until about three-quarters have melted.
  4. Remove from heat and stir continuously until fully melted. Mix in peppermint extract and food coloring.
  5. Pour the mixture over the Rice Krispies and gently fold until coated.
  6. Let it cool for about 5–8 minutes, then stir in most of the mini chocolate chips.
  7. Transfer into a greased 8-inch baking pan, pressing down gently, and sprinkle reserved chocolate chips on top.
  8. Allow to set at room temperature for at least 30 minutes before cutting into squares.
