- 2 eggs
- 1/2 cup vegetable oil
- 1/2 cup plain Greek yogurt

- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon (plus more for the swirl)

Instructions
- Preheat your oven to 350°F (175°C). Line a 9×5 loaf pan with parchment paper.
- In a large bowl, mix together the shredded zucchini, eggs, vegetable oil, Greek yogurt, and vanilla until smooth.
- In another bowl, whisk together flour, sugar, baking powder, salt, cinnamon, nutmeg, and cloves. Gradually add this mixture to the wet ingredients until just combined.
- In a separate small bowl, combine sugar and cinnamon for the swirl.
- Pour half of the batter into the prepared pan and sprinkle half of the cinnamon-sugar mixture on top. Add remaining batter and finish with the rest of the swirl mixture. Use a knife to create a marbled effect by swirling gently through the layers.
- Bake for 60–65 minutes or until a toothpick inserted comes out clean.
- Let cool in the pan for about 10–15 minutes before slicing.
