  • 4 boneless skinless chicken breasts (6 ounces each)
  • 1 egg
  • ⅓ cup almond flour
  • ⅓ cup grated parmesan cheese
  • 1 teaspoon garlic salt
  • 1 teaspoon Italian seasoning
  • ½ teaspoon pepper
  • 2 tablespoons olive oil
  • 3 ounces fresh baby spinach
  • 16 ounces low-carb marinara sauce (no added sugar)
  • 1 cup ricotta cheese
  • 2 cups grated mozzarella cheese

Instructions

  1. Preheat the oven to 375 degrees F.
  2. In a shallow bowl, whisk the egg until blended.
  3. In another bowl, combine almond flour, parmesan cheese, garlic salt, Italian seasoning, and pepper.
  4. Dredge each chicken breast first in the egg mixture and then coat with the dry mixture.
  5. Heat olive oil in a cast iron skillet over medium-high heat and sear chicken until golden brown (about 4 minutes per side).
  6. Remove chicken and sauté fresh spinach until wilted.
  7. Cut the seared chicken into bite-sized pieces and return to the skillet with spinach.
  8. Stir in marinara sauce, ricotta cheese, and half of the mozzarella cheese.
  9. Top with remaining mozzarella and bake for 20-22 minutes or until bubbly.
