Ingredients
- ½ cup balsamic vinegar
- 1 teaspoon honey
- 2 medium peaches
- 1 8-ounce ball of mozzarella
- 1 bunch fresh basil
- Sea salt & freshly ground black pepper to taste
Instructions
- In a small saucepan, combine balsamic vinegar and honey over medium heat. Bring to a low boil, then reduce heat and simmer for 10-15 minutes until reduced by half. Cool in the refrigerator.
- Slice the peaches into quarters and the mozzarella into thin slices. Tear basil leaves.
- On a large plate, arrange alternating stacks of peach slices, mozzarella slices, and basil leaves.
- Just before serving, sprinkle with flaky sea salt and black pepper and drizzle with the balsamic glaze.
