- 4 boneless skinless chicken breasts (about 1 1/4 lbs)
- Salt and pepper
- 1/2 medium yellow onion (sliced)
- 2 cloves garlic (minced)
- 1/3 cup balsamic vinegar
- 1 Tbsp honey
- 2 cups sliced firm peaches (about 2 medium)
- 1 can diced tomatoes (14.5 oz, drained)
- 1/4 cup fresh basil (thinly sliced)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Sauté onions for about 3 minutes until softened.
- Add seasoned chicken breasts to the skillet and cook for approximately 2½ minutes on each side until golden brown.
- Remove chicken and set aside. In the same skillet, sauté garlic for about 20 seconds until fragrant.
- Pour in balsamic vinegar and reduce by half while stirring for about a minute. Mix in honey, peaches, and drained tomatoes; season lightly.
- Return chicken to the skillet, cover, and simmer on medium-low heat until cooked through (165°F), about 6-9 minutes.
- Garnish with fresh basil before serving warm.
