  • 2 Tbsp olive oil
  • 4 boneless skinless chicken breasts (about 1 1/4 lbs)
  • Salt and pepper
  • 1/2 medium yellow onion (sliced)
  • 2 cloves garlic (minced)
  • 1/3 cup balsamic vinegar
  • 1 Tbsp honey
  • 2 cups sliced firm peaches (about 2 medium)
  • 1 can diced tomatoes (14.5 oz, drained)
  • 1/4 cup fresh basil (thinly sliced)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Sauté onions for about 3 minutes until softened.
  2. Add seasoned chicken breasts to the skillet and cook for approximately 2½ minutes on each side until golden brown.
  3. Remove chicken and set aside. In the same skillet, sauté garlic for about 20 seconds until fragrant.
  4. Pour in balsamic vinegar and reduce by half while stirring for about a minute. Mix in honey, peaches, and drained tomatoes; season lightly.
  5. Return chicken to the skillet, cover, and simmer on medium-low heat until cooked through (165°F), about 6-9 minutes.
  6. Garnish with fresh basil before serving warm.
