Description

Peanut Chicken Lettuce Wraps with Ginger Garlic Sauce are a delicious and healthy dish that combines the crunch of fresh lettuce with savory ground chicken and a tangy, flavorful sauce. Perfect for quick weeknight dinners or as an interactive appetizer for gatherings, these wraps are easy to customize to suit your taste preferences.


Ingredients

  • 4 tablespoons soy sauce
  • 3 tablespoons water
  • 1 tablespoon sambal oelek (chili paste)
  • 1 tablespoon honey
  • 1 tablespoon fresh ginger (I use a paste)
  • Juice of 2 limes
  • 2 garlic cloves, minced
  • 4 green onions, minced
  • 1 teaspoon cornstarch (optional – helps the sauce thicken)
  • 2 tablespoons sesame oil
  • 1 lb. ground chicken or turkey
  • 1/2 cup lightly salted peanuts, chopped
  • 6 ounces rice noodles
  • 12 leaves of lettuce (I used Boston lettuce)
  • Chopped cilantro, green onions, and peanuts for topping

Instructions

  1. In a small mixing bowl, whisk together all the sauce ingredients until well blended.
  2. Pour about 3/4 of this mixture into a larger bowl with the ground chicken and chopped peanuts. Stir to combine thoroughly and let marinate for about 15 minutes.
  3. While the chicken is marinating, soak the rice noodles in a large bowl of water until softened.
  4. Once softened, drain the noodles and rinse them under cold water. Cut them into smaller pieces for easier filling.
  5. Heat sesame oil in a large skillet over medium heat.
  6. Add the marinated chicken and peanut mixture to the skillet. Sauté for about 10 minutes or until fully cooked through.
  7. Stir in the soaked noodles and continue stir-frying for another 5 minutes until everything is heated through. Adjust moisture as needed by adding water or additional sauces.
  8. Remove from heat once everything is cooked.
  9. Scoop generous portions of the chicken mixture into each lettuce leaf.
  10. Top with chopped cilantro, extra green onions, peanuts, and drizzle with reserved sauce before serving.
