  • 1 box yellow cake mix
  • 1/3 C. melted butter (cooled)
  • 3 eggs
  • 1 1/4 C. crushed pineapple with juice
  • 2 tsp. vanilla extract
  • 1/2 C. butter (softened)
  • 8 oz cream cheese (softened)
  • 1 tsp. vanilla extract
  • 34 C. powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line cupcake pans with liners.
  2. In a large bowl, combine melted butter, eggs, crushed pineapple (with juice), and vanilla extract; mix well.
  3. Sift yellow cake mix into the wet mixture and stir until smooth.
  4. Fill cupcake liners about 3/4 full with batter.
  5. Bake for 17-22 minutes or until a toothpick inserted comes out clean.
  6. Allow cupcakes to cool completely before frosting.
  7. For the frosting, beat softened butter and cream cheese together until smooth; add vanilla and gradually mix in powdered sugar until desired consistency is reached.
  8. Frost cooled cupcakes generously and top with cherries or sprinkles.
