Ingredients
- 1 box yellow cake mix
- 1/3 C. melted butter (cooled)
- 3 eggs
- 1 1/4 C. crushed pineapple with juice
- 2 tsp. vanilla extract
- 1/2 C. butter (softened)
- 8 oz cream cheese (softened)
- 1 tsp. vanilla extract
- 3–4 C. powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and line cupcake pans with liners.
- In a large bowl, combine melted butter, eggs, crushed pineapple (with juice), and vanilla extract; mix well.
- Sift yellow cake mix into the wet mixture and stir until smooth.
- Fill cupcake liners about 3/4 full with batter.
- Bake for 17-22 minutes or until a toothpick inserted comes out clean.
- Allow cupcakes to cool completely before frosting.
- For the frosting, beat softened butter and cream cheese together until smooth; add vanilla and gradually mix in powdered sugar until desired consistency is reached.
