  • 1 cup (8 ounces; 227 grams) mascarpone cheese, room temperature
  • ¼ cup (50 grams) granulated sugar
  • 4 large eggs, divided
  • 1 teaspoon vanilla extract
  • ½ cup packed (100 grams) light brown sugar
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon freshly grated nutmeg
  • Pinch of cloves
  • Pinch of coarse kosher salt
  • 1 (15 ounce) can 100% pumpkin puree

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the spelt crust in a 9-inch pie dish, pricking the bottom with a fork to prevent bubbling.
  3. In a mixing bowl, whisk together mascarpone cheese and granulated sugar until smooth. Add in 3 eggs (reserve one), vanilla extract, brown sugar, spices, salt, and pumpkin puree. Mix until creamy.
  4. Pour the filling into the prepared crust and smooth the top.
  5. Bake for about 60–75 minutes or until set in the center with golden edges.
  6. Allow to cool completely on a wire rack before slicing. Swirl reserved mascarpone on top before serving.
