  • 250 ml (1 cup) full cream milk
  • 20 g (1 tablespoon) unsalted butter
  • 2 teaspoons vanilla extract
  • 200 g (2 sticks) unsalted butter, softened
  • 110 g (1/2 cup) caster sugar (superfine sugar)
  • 2 eggs
  • 185 g (1 1/4 cup) plain flour (all-purpose flour)
  • 2 teaspoons baking powder
  • 40 g (1/3 cup) custard powder
  • 12 fresh rhubarb stalks
  • 20 g (1 tablespoon) unsalted butter, melted
  • 4 teaspoons granulated sugar

Instructions

  1. Preheat your oven to 160°C (320°F) and grease an 8-inch round baking pan.
  2. In a saucepan over medium heat, combine milk, custard powder, caster sugar, unsalted butter, and vanilla extract. Stir until thickened and set aside to cool.
  3. In a mixing bowl, cream softened butter and caster sugar until fluffy; add eggs one at a time.
  4. Mix plain flour and baking powder in another bowl; gradually incorporate into the wet mixture until combined.
  5. Pour half of the batter into the prepared pan, spread cooled custard on top, sprinkle chopped rhubarb, then cover with remaining batter.
  6. Bake for about 1 hour and 30 minutes or until a toothpick comes out clean. Let cool before serving.
