Ingredients

Scale
  • 1 salmon fillet (about 150g)
  • 2 eggs
  • 1 cup cherry tomatoes
  • 1 cup asparagus spears, trimmed
  • 56 button mushrooms
  • Olive oil or butter for cooking
  • Salt and black pepper to taste

Instructions

  1. Season the salmon fillet with salt and pepper. Heat olive oil in a non-stick skillet over medium-high heat. Cook the salmon skin-side down for 3-4 minutes per side until golden brown and flaky. Keep warm.
  2. In the same skillet, sauté button mushrooms for 4-5 minutes until browned. Season lightly with salt.
  3. Add asparagus to the pan with mushrooms; sauté for an additional 2-3 minutes until tender yet crisp.
  4. Whisk eggs in a separate bowl, then scramble in another non-stick pan over medium-low heat until just set.
  5. Blister cherry tomatoes by quickly sautéing them or roasting in the oven at high heat for about 5-6 minutes.
  6. Assemble your bowl by arranging seared salmon, scrambled eggs, sautéed asparagus, mushrooms, and roasted cherry tomatoes.
