  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 1 large egg, lightly beaten
  • 1/2 cup milk
  • Vegetable oil, for frying
  • 1 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon lemon zest
  • Salt and pepper to taste

Instructions

  1. Soak salt cod in cold water for at least 12 hours, changing the water several times. Drain and flake into small pieces.
  2. In a bowl, whisk together flour, cornstarch, baking powder, salt, and pepper. Stir in chopped parsley and dill.
  3. In another bowl, whisk together the egg and milk; then mix into dry ingredients until just combined.
  4. Gently fold in flaked salt cod.
  5. Heat vegetable oil in a skillet over medium-high heat. Drop spoonfuls of batter into hot oil and fry until golden brown on both sides (about 2-3 minutes each).
  6. Place fritters on a wire rack to drain excess oil.
  7. For the aioli: Combine mayonnaise, minced garlic, lemon juice, parsley, lemon zest in a bowl; season with salt and pepper.
  8. Serve warm fritters with the lemon garlic aioli on the side.
