  • 1 1/2 pounds boneless skinless chicken breasts
  • 3 bell peppers (green, yellow, red)
  • 1 yellow onion
  • 2 cloves garlic
  • 3 tablespoons vegetable oil
  • 1 tablespoon chili powder
  • 1 1/2 teaspoons paprika
  • 1 1/2 teaspoons cumin
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • Salt and freshly ground black pepper
  • 1 lime, juiced
  • 1/4 cup fresh cilantro, chopped
  • 810 small flour tortillas
  • Desired fajita toppings: sour cream, sliced avocado or guacamole, pico de gallo, shredded cheese

Instructions

  1. Preheat oven to 425°F.
  2. Grease a large sheet pan with non-stick cooking spray.
  3. Slice chicken into strips and vegetables into strips; place them evenly on the pan.
  4. In a small bowl, mix seasoning ingredients. Sprinkle most over chicken and some on veggies; add minced garlic and drizzle oil on top.
  5. Roast for 15-20 minutes until chicken reaches 165°F. Warm tortillas in foil during the last 5 minutes.
  6. Squeeze lime juice over the dish and garnish with cilantro before serving.
