Ingredients
- 1 1/2 pounds boneless skinless chicken breasts
- 3 bell peppers (green, yellow, red)
- 1 yellow onion
- 2 cloves garlic
- 3 tablespoons vegetable oil
- 1 tablespoon chili powder
- 1 1/2 teaspoons paprika
- 1 1/2 teaspoons cumin
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- Salt and freshly ground black pepper
- 1 lime, juiced
- 1/4 cup fresh cilantro, chopped
- 8–10 small flour tortillas
- Desired fajita toppings: sour cream, sliced avocado or guacamole, pico de gallo, shredded cheese
Instructions
- Preheat oven to 425°F.
- Grease a large sheet pan with non-stick cooking spray.
- Slice chicken into strips and vegetables into strips; place them evenly on the pan.
- In a small bowl, mix seasoning ingredients. Sprinkle most over chicken and some on veggies; add minced garlic and drizzle oil on top.
- Roast for 15-20 minutes until chicken reaches 165°F. Warm tortillas in foil during the last 5 minutes.
- Squeeze lime juice over the dish and garnish with cilantro before serving.
