  • 8 oz (225 g) cremini or white button mushrooms, sliced
  • 2 cloves garlic, minced

  • Salt and black pepper, to taste
  • 2 tablespoons grated Parmesan cheese (optional)
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add 8 oz of sliced mushrooms; cook for 5-7 minutes until browned.
  3. Stir in 2 sliced zucchini; cook another 5-7 minutes until tender yet crisp.
  4. Add 2 minced garlic cloves, 1 teaspoon of Italian seasoning, crushed red pepper flakes (if desired), salt, and black pepper. Cook for an additional 1-2 minutes until fragrant.
  5. Remove from heat; garnish with optional grated Parmesan cheese and fresh parsley if desired.
